2 pieces of salmon fillet
Butter to coat baking pan
Salt and Pepper to taste
2 tbsp, Olive Oil
Juice of ½ Lemon
1 Clove, Garlic
1 tbsp, Chopped Fresh Parsley
1 tbsp, Fresh Thyme
Directions
- Preheat oven to 400 degrees
- Lightly butter a baking pan
- Arrange 2 pieces of salmon (6-8 ounces each) skin side down on pan
- Season with salt and pepper
- Mix 2 tablespoons olive oil, juice of ½ lemon, 1 clove crushed garlic, a tablespoon each of chopped fresh parsley and fresh thyme
- Spoon the mixture over the salmon, being sure to cover the sides as well
- Bake the salmon for 12-16 minutes, or until the fish flakes easily with a fork
- Spoon any juices over the fish, Serve hot
Notes
- This dish best served with sautéed asparagus and brown rice
