Ingredients

  • 2 pieces of salmon fillet

  • Butter to coat baking pan

  • Salt and Pepper to taste

  • 2 tbsp, Olive Oil

  • Juice of ½ Lemon

  • 1 Clove, Garlic

  • 1 tbsp, Chopped Fresh Parsley

  • 1 tbsp, Fresh Thyme

Directions

  • Preheat oven to 400 degrees
  • Lightly butter a baking pan
  • Arrange 2 pieces of salmon (6-8 ounces each) skin side down on pan
  • Season with salt and pepper
  • Mix 2 tablespoons olive oil, juice of ½ lemon, 1 clove crushed garlic, a tablespoon each of chopped fresh parsley and fresh thyme
  • Spoon the mixture over the salmon, being sure to cover the sides as well
  • Bake the salmon for 12-16 minutes, or until the fish flakes easily with a fork
  • Spoon any juices over the fish, Serve hot

Notes

  • This dish best served with sautéed asparagus and brown rice
